It sounds like you are not finding the appropriate things to hunt for your level. With the prime izam comment, sounds like you are zorai. Good hunting should be found in Maiden Grove, or if you can find a healing partner of lower level, the igara in the Haven of Purity are awesome (non-aggro, don't link, capryni will help them out so they are the only thing to watch out for) and HoP is about 50m outside the east exit of Zora! If you are fyros (not sure if they have prime izams) then oflovak's oasis should be more your level.
Armor only absorbs so much damage of a % of a hit. So if you have 50% protection, 100 smash protection HA, damage will be affected thusly:
Hit for 200dmg, armor absorbs 100, you take 100.
Hit for 100dmg, armor absorbs 50(50%), you take 50.
Hit for 300dmg, armor absorbs 100(max smash protection), you take 200.
Some mobs have armor piercing hits, and high damage hits. Just like players, learning which mobs have which attacks will better help you plan on what to hunt. Obviously zerx are a nono because they have an insanely high damage hit. So they are generally avoided, unless necessary.
