I know that for weaps made with all choice mats, the max damage possible per quality level is as follows:
Q10 = 72
Q20 = 92
Q30 = 112
Q40 = 132
Q50 = 152
and so on up the chain of quality levels.
But what happens when you start making weapons out of excellent or supreme mats? I would imagine the max damage rates are better than choice, but follow the same type of progression through the quality levels. Does anyone have this data?

The max damage will stay the same.
A weapon with choice big shell and oath bark will have the same max damage as one with supreme big shell & oath bark. It will have a higher attack speed, though. If you mix supreme mats right you can make weapons which have the max in 3 stats instead only in 1.

Also, you mention that mixing mat grades can max out a third stat other than damage and speed. What is that third stat? What kind of numbers are we talking?

Any stat. Depends what mat you are using.
Look at it: choice oath bark has about 40% average, 80% in stats with boni (damage) and 20% in stats with mali (lightness & paary mod). For supreme oath bark you have 80/100/60 there.
Because of this you have more speed (and durability, enemy dodge malus, etc.) in a weapon with supreme oath bark & big shell as in a weapon with choice. Simply because supreme mats have a higher boni in all stats.
Now, with choice you need big shell AND oath bark to get max damage. With supreme big shell is enough to get the weapon to max damage, so you could use an shaft mat which has boni in another stat (speed, sap load, durability, enemy dodge mod, whatever.
For pikes I used supreme Splinter shell, oath bark and dzao fiber for example, resulting in weapons with 100% damage, 87% speed and 100% enemy dodge mod. If I used another type of shell or fiber (both had boni on enemy dodge mod) I could have brought another stat to 100%.

this only works of course if the other weapon has slower attack speed...
so my question:
at high levels is there any difference between weapon speeds or are all 100% and thus all hit as fast?

Each weapon has its own speed. I recently hit 51 forager, and gained added ability to find exactly the right matterials for the job, and went on a crafting experiment.
I made the BEST dagger, one handed sword, and two handed sword. I am level 30 fighter, and use light armor (I know, on the mainland I would be a snack in no time, but on newb lands, light works).
I took my sword dagger combo, dagger/dagger combo, and 2 hander into dangerous lands and picked a few fights. I found that against MOST mobs, weapon didn't matter, I could shred most mobs rather effectively with ANYTHING I had in hand. Kippees proved to still be a challenge, and Goari were tougher if in a gang of three or more.
The Dagger/dagger combo lost its glamour rather quickly against the tougher foes. The 2hander got me killed (from FULL health to no health after having used self heal 3), it was just TOO slow, and I missed too much. I also could NOT account for the irratic damage jumps (92, 23, 4, 10 miss miss miss 15), the sword dagger combo was at least as damaging, I sware the numbers were just about the same, only I was hitting faster and missing less.
Now I agree, for FULL out cool looks...2hander wins. But I am changing from two daggers to a dagger and one hander. I MIGHT keep the 2 hander to work on the skill tree later, but I will NOT be counting on it in a fight without a healer to back me up due to the slowness and miss rate being higher on 2 hander.
I am willing to contemplate the idea that eventually 2 hander will actually be MORE effective, when I am higher level fighter and "more able to swing the heavy weight" which was the discussion in region when I mentioned my miss rate. LOL we got into a "have you ever really tried to swing a real 2handed sword in real life"
I love Fyros newb land...I really do. You can learn and discuss without egos or testosterone getting in the way. Ideas form, and knoweldge is gained. I really LOVE that group of people.

In the bigger picture I think that dual 1H or a 2H will result in the same damage over time.
(I´d need some numbers on speed/damage of 1H weapons Q50 - Q90) to crunch some numbers as I only know the 2H values)
One problem I see is that you will burn through your Stamina/HP a lot faster with 1H weapons due to the higher hitrate .. in that case .. special attack rate.
Oh, and if you play a female toon you might want to keep the hitrates low ... not because of looks, damage or anything one could count in stats ...
Its just ... the screaming of my char, as soon as I use incr. dmg with a sword or mace, drives me nuts

You might not think that if you have dueled anyone. Currently the pike does the fastest damage of all the weapons and I have beaten longsword, long mace, long axe, two daggers, sword and dagger combos with the pike. There is one thing you have to realize. Not all weapons work the same way against the same mobs. Each mob has a resistance to a type of damage. Daggers are piercing damage and swords are slashing dmg for example. Also the attack you use greatly affects your outcome. For a dagger, the default attack is very good as it uses very little stamina since you swing alot with those daggers. When using the two handed weapons you want to maximize your damage since you swing much slower. This is when you create an attack with accuracy and increase damage. This will allow you to do alot more damage per hit and hit consistantly. I use a damage increase 5 + accuracy 4 for example. While it uses alot of stamina, I hit consistantly for 304 dmg with my pike. It does eat up a giant chunk of my stamina so I usually try to finish stuff fast. I use a circle attack stanza with a lower + accuracy and dmg when I am faced with multiple mobs. While this does only about 240 dmg a hit I am able to stay alive. I usually work best with a healer who can heal my stamina and constantly put out those 304 dmg hits.
