you shouldnt be losing 250 hp for a mob that only gives you 900xp. Are you using a wpn that the mob doesnt have resistance for? If your doing izams use slashing, if yber use pierce. Also are you using a 1h wpn or 2h wpn? I've found 2h wpns work a lot better than 1h for solo. Reason is that the 2h hit for more dmg, swing slower so you use less stam, and parry more than 1h. (w/o shield).
You shouldnt be needing to spend 200 stam to kill a 900xp mob. If you're using 1h switch to a 2h equivilant. If you're currently using a 2h then try a different species. Some are easier than others to kill.

Yeah you should be able to stand in a field of 900 xp critters and tank them all day. I would suggest modifying your stanzas. I have my main power attack which consumes stamina but I have 3-4 other attacks that trigger off dodge and cost no stamina. Use things like bleed. Circular attack with bleed in a crowd is a nice touch. The majority of my attacks require no stamina because I dodge all the time and I solo 2k+ xp mobs with very little if any downtime. Also check efficency of your abilities. The max increase damage is never the most bag for the stamina buck you will get. Combo accurate attack with a Inc damage that is 1-2 below your top line and you will be doing better, plus if you use attack after dodge/parry you can probably use it for free.
In terms of healing you can combo self heal/stamina and it may be great, I have never tried it because I dont even have self stamina heal. I did pick up the health aura and although I once thought it to be useless I have found when I use it alternately with self heal it dramatically reduces downtime. Health aura one has 5hp heal a tick I think.
As someone else suggested you might need to upgrade your weapon and armor. You should be in ql80 weapons and ql 50 heavy armor at least.
Lastly if I take a really tough mob instead of sitting hack up one or two easy ones nearby. I am 63rd level 2h warrior and if I am soloing a baying clopper I will sometimes take a minute and kill a few hard kipees, the xp for them is terrible but they drop so quickly and the drops are easy money. Plus i can craft off the drops for xp. Or I will sometimes take out 2 dagger and use the 2h melee downtime to bump up my close combat xp but now the easy mob gives me 700 xp and only takes 5-10 seconds to dispatch.

There have been a lot of good tips for you in this thread so far. I am wondering one thing about your initial post, though.
What about your regeneration time? If you are sitting down and having to wait two minutes, that seems long to me. You probably already know this, but then again I get the feeling that maybe you missed it, so I just want to point out that beefing up metabolism and balance stats will increase your hp and stamina recovery rate, respectively.
My situation is a bit different since I play a warrior/mage hybrid. Right now, though, I'm using a modified cold 2 type spell that is very draining on the sap. My wisdom is pretty beefed up, so my regen time is quick, but it still takes a little while to recover when I am completely drained; although certainly not two minutes of me sitting on my can. One nice thing about the warrior/mage combo, though, is that if I drain my sap all the way, I just start hacking with my sword and poking with my dagger. By the time the mobs go down, my sap has recovered nicely. Maybe not all the way, but enough to where I can pull with my cold 2 again, then bash. I have no downtime at all.
I realize this is not your preferred playing style, but I am telling you it works, so you may want to consider it.
If not, definitely beef up your regen rate by increasing metabolism and balance; of course, that's assuming you haven't already.

I am in the process of getting bumps in armor and weapons.

There are several more things that I will work on to improve the time fighting and reduce the time waiting on the Regen to complete. I do have Regen at about the maximum level for me. (have to work on some crafting to get some quick levels to apply to healing and stam)
