I went to the chat options and moved the slider all the way to the right, but the font is WAY too small. Currently running 1600 x 1200 resolution.
How can I make my font bigger??

You can fiddle with the config file, which you might know is against the rules. Or you can send in a suggestion ticket.
Another, untried and unsurported option, is to replace the current font file. But again, that's against the rules.
I haven't tried this, but there is an option for larger fonts in MSWindows (not the handicap one). It might work, downside is, it will make all fonts bigger. I forgot where the option is, but look for some DPI settings or somesuch.

In the Game Configuration...Interface...Chat there is a slider for altering the font size in Chat.

I find ClearType really makes life better and I am running Ryzom at 1600x1200 on a 15" LCD screen. Make sure it is enabled in your Windows Display Adapter -> Effects settings.
