There's no max or cap on learning skills. As far as I know, no one has difinitively proven this, however, it's generally thought that there's WAY more than enough skill points available to learn every skill in the game.
Every time you gain a level, you get 10 skill points. Once you get to a level where the skill trees split, you'll find that this leads to a LOT of points. For example, after L21 in fight, the tree splits to Melee Fight and Range Fight. That means you can level up both branches separately and get skill points for both. Leveling up a secondary line of the tree is a good way to earn some extra SP to spend.
Now when you're first starting out, the skill points are a little more sparse so you'll need to pick and choose a little. Later on, as the skill trees start splitting, you'll end up building up a lot of extra skill points.
Because skill points are spread a little thin when you're first starting out, I'd suggest first increasing your HP and Sap (if you're a magic user). For a melee user, stamina is also important but I've found you can let that lag a little at first. But you'll eventually want to get this up to the max level available to you as higher level melee actions can burn through stamina fast.
