Actually, you get 10 skill points for every level you gain in a skill box. Last time I checked, there were a total of 2280 levels possible in the entire Fight tree (the number might be a bit different now, but it's probably in the ballpark). So, if you managed to completely fill up every single branch of the Fight tree, you would probably be pretty sick of combat. You'd also have earned somewhere in the neighborhood of 22,000 Fight points to spend on different skills.
There is no limit on the maximum amount of levels you can gain in one tree, although all the branches currently end at level 250. If you're willing to put the time into it, you could eventually learn every single skill box in every branch of every tree, all the way to max.
The reason this works is because you do not automatically become more powerful by gaining levels. Your effectiveness, not including the 'player intelligence' factor, is determined by the minimum of your skill level in that particular skill (for example, 1 handed sword fighting) and the equipment quality level you are using (your weapon, or your materials for crafting). Learning new skill trees will make you more effective in different situations, and will probably allow you to learn a wider variety of skills, but someone with multiple skill branches at 250 won't be naturally more powerful than someone who has only hit 250 in one skill.
Because you could eventually learn everything, there's really no way to gimp your character. The worst you could do is make it more difficult to play, but with some time (and perhaps a good group or two) you could always learn whatever skills you're missing.
