Mobs resisting magic

Hiya,
My g/f and I were out hunting with a great team last night, we took on Hard Kipees, and then went after those mount thingies, bekotoubs or whatever they're called, hehe. I must have levelled 10 times that day in melee, but my g/f could only really level her defensive magic.
She's a caster, and every time she hit a mob with a spell, the mob would resist. At first, with the Kipees, we thought this was because they're resistant to acid, so, she tried Cold spells, and still the same effect, or lack of. I think she managed to get 2 offensive levels in the whole day.
She's just bought Rot 1 and Root, just in case the mobs we were hunting are less resistant to either of them. One thing though... does Root count as Offensive or Defensive?
Does the chance to resist magic go on the caster level (she's 23 Offensive I think), the spell level (Acid 2 didnt seem to work any better than Acid 1), or something else? (I.e intelligence/wisdom maybe?).
We're going to try hunting gingos tonight, just the two of us, but if we end up in a big party again going after 'big game', how would you suggest she gained offensive xp?
