concerning creatures: there are none shown on the map, (they're just too many!) you have to find out where everything is, don't forget mobs move far away some times (i miss Dyron's Aranas btw...)

concerning tribes: there you have to find out too, sometimes you think you met a new tribe and then you realise these are bandits ><. Their camps don't move and are very usefull for safe travel as most guilds will help you kill possible aggros.

concerning harvesting spots: each harvester has his own (more or less) top secret spots; you have to start searching.

Now there's a usefull thingy called "landmark" on your "m" map window, right click an area and select "add landmark" you'll be able to place a small flag with a short name (which enables you to know what you flagged there). All harvester use these to mark their sources.
Don't forget to zoom in and out on your map, when you click on Pyr/Dyron/Thesos you get a detailed map of the city/town, in order to come back to the continent map just click the arrow in the top left corner.

There, hope it helps a bit, and i'm wondering if that encyclopedia will help keeping track of everything
