Besides being able to hold better weapons does it have any effect on anything else? Like maybe how hard you hit or allows you to take damage less?
(I know you get a stam boost with it though)

I personally haven't seen any damage increases due to strength increase. But I have seen damage increase by higher quality weapons as my fight level reaches the quality of that weapon.
I was wondering the same thing about Dexterity and if it had any affect on Dodge. But I can't seem to confirm it ... all I can see is that my ability to dodge increases as my level increases over the mob I'm fighting.

to increase dodge or parry, you'll need to get a wpn/armor set that was created with higher dodge or parry attribute materials. I dont believe stats do anything other than create requirements for weapons.

I thought Strength gave you more stamina. Like 50 points more.
