There is no overall level.

Welcome, by the way. :)

Think of stanzas as lego and the skill as a lego model.
Stanzas are the bricks and you can put them together in various ways in order to construct the final skill.

So.

Say I'm a melee fighter and I want a good skill for attacking and taking out bosses with my team.

I select increased damage as high as it can go and bleed as high as it can go.
Now I have to balance the cost of these manouevres with something that balances it.

I pay it off with stamina and hitpoint drain until the cost of the skill, and the payments match. I'm anticipating having healers so these two drains aren't too much to worry about.

I have a few points extra to spend since the credit stanzas aren't precise. I could leave it with those extra, which will increase my skill's chance of working, or I could find something else for the slot. Knowing this type of creature has weaker armour in the head I fill the remaining points with a low level 'aim - head' stanza. It won't happen most of the time, but what the hell.

There's no perfect build and non ninjing type skills really. With your preference for ninjing you should probably go for an affliction type attack and work as part of a team. 2h swords and axes are the main damage dealers and get bleed attacks. Pikes can bypass armour, which may suit your sneaky style. Maces can slow down the enemy (all with the right stanzas). Aimed attacks - if they score a critical - can also have status type effects but you shouldn't really consider raising these abilities until later in your career. A good head hit can stun for example.

-2h weapons or dualwield what are the pros and cons?

2h weapons have much greater damage potential. Dual wield means you can have extra HP boost on both weapons which gives you a bit more damage absorption, 1h weapons are also faster. You can only dual wield two daggers, or sword and dagger. One advantage of 1h weapons is their relative speed - daggers particularly - which greatly increase the number of times you can hit and thus the chances of scoring criticals. Two outpost mat critical hit daggers would make a fairly fearsome afflictor and mage disruptor but these weapons often lack the 'oomph' for solo hunting and will tend to drain your stamina etc rather quickly.

You can't. There isn't an overall level.

Welcome mate, hope you are having fun.

My tips for being a good melee fighter:

1. Buy good quality heavy armour with large hp boosts, that way you can afford to take hp drain and still be okay.

2. Get increased damage as high as you can and to accompany this get self heal stamina if you fighting solo like I do alot. this was you can replenish the stamina you lose for using increased damage.

3. Don't stand stationary when fighting, hit, move, hit move. this way you won't get large amounts and you will have the edge against slow moving mobs etc. By the time they turn to face you, you can get hits in.

Hope this helps.

Kindest regards,
