OK I've learnt how to enchant a weapon and load it with SAP crystals. But what enhancements does this actually make dont see much difference to no enchantment ?

Click the 'use item' action in your action bar.

You can use the "Use Item Enchantment" action to instantly cast the spell the weapon is enchanted with. You can use max time credit in the spell, and still cast instantly, even while in full heavy armor - you might be able to guess the benefit of this.
