I dont understand how they work. For instance :

HA with 60 % protection and shield with 20% protection ( so, 80% )
HA with slashing protection 550 shield with 225 ( 775 )

The mob deals me 900 hp of dmg, so i thought i should receive just 180 hp 20% of the dmg ), but its not like that, it changes the dmg received every hit and it is always higher than 180 hp.

Anyone can explain it pls ?

Thought it was something like:

Your heavy (60%) takes the damage from say 900 to 360.
Then your shield (20%) takes the damage from 360 to 288.

The shield only shields certain parts of your body. I am not sure if this changes for buckler versus full shield. I do know that your feet do not get shielded, I am not positive which of the other parts do. I think the breakdown is as below.

Protected by shield:
Head
Arms
Hands
Chest

Not protected by shield:
Legs
Feet
