I'm not new, but I've been gone a long time. A lot has changed I can already tell.

What should I know about foraging? are people using gentle harvesting now? I find that I need to in order not to die.

Is material specialization extraction still worthless? What do the environment extraction plans do now?

Anything new out there to forage?

Foraging solo is better with gentle.

material specialization extraction is not worthless. environment extraction does what it says. You should use both. They give you more stable sourcen and more/better quality.
