Not necessarily the game but any kind of "economy" in the game is doomed.
But Shrike is right, when you try to supply yourself with materials through fighting or harvesting your fight and harvest skills will level at 3 or 4 times the pace your crafting skill advances, making it impossible for you to supply yourself with level-adequate gear in the long run.
Remember that at the moment the
only thing limiting xp gain in craft is availability of materials. When crafting you burn through 20 mats in 1 minute, but you need 1 hour to get the mats in the first place.
However, when Nevrax should re-introduce NPC mats of higher levels then the only thing that limits xp gain in crafting will be the amount of money a crafter can spend. In both cases (availability of money or materials) it's the guild sponsored crafters of all levels who have the edge.

To get back to the question of High Level Crafter affecting Lowlvls.
Dont think that will happen for the reasons already mentioned. A Highlevel Crafter won´t "waste" his time crafting highlevel mat into lowlevel goods for virtually no exp.
What the market lacks a bit at the moment is a reasonable supply of raw mat. I´m working with a Lvl 100+ Harvester, raising harvesting myself and I still lack the ressources to level my crafting skills efficiently.
At the moment I spend my ingame Time with: 70% harvesting / trying to get mats, 10% Crafting, 20 % fighting
My Melee skill idles most of the time as i cannot level my crafting skills fast enough to keep up with it.
To be honest, I couldnt be bothered to craft valuable HIgh Q Mats into lowlevel Items for no gain. Neither could i be asked to harvest lowlvl mats .. no gain again.

when the xp is topped off you'll start seeing them make lowend items too, but with enough cash to back up crafting top end lowbie weps and armor.
with no more xp gained in armorcrafting you'll see them start going for dap instead.
