Heck I almost got owned by a level 18 Kipee because the damn thing stunned me... and my character's level 60 in combat. I felt like a wimp having to (the second the stun wore off) turn on Melee Prot Aura to beat something -40 levels to me... LOL!

Also, each mob has it's own strength's and weaknesses and your gear has to be best suited for them. What works good on a Ragus, may not be best for a Gingo or Kipee... Your mileage will vary on all mobs, as you learn more you will find the mob that best suits your level and specialty.
Yes.. things have resistance. I found out the hard way that Wary Rendors seem to have about 50% resistance to swords.
I also noticed that some critters have resistances only on part of their bodies.... which has made me re-consider my previous decision not to get "called hit location" skills. It might be useful if you know the rendor has a weak head (but is resistant to you everywhere else) to have "head shot" (just an example).
To the OP:
The timed "find this guy in the desert" quests (and their ilk) suck. There is no question about it. The idea of giving someone a quest to just walk around and find some NPC in the middle of a huge zone, and having any thought that this would be the least bit fun or enjoyable, boggles my mind. I have no idea what they were thinking when they made this quest up.
However, there is a way to deal with it. Go back to the guy who gives the quests. Look at every one but take none of them. Write down the name of every guy. Then go outside the city and wander around, looking for lone NPCs. These guys often have (Harvester) or (Prospector) after their name, and are usually low level solitary NPCs. Check their name... and odds are (if you are in the right zone, and you should be if you stick close to where you go the mission) it will match one of the names on your list. Landmark your position, then run back to the quest giver and take the mission for that guy. Now just go back to your land mark and hand him his message, and you're done.
Also you really don't need to do this quest... I waited like 2 weeks because it was too annoying and I wanted to just have fun. The key is to find something fun and do that. I found hunting Igaras and Bodocs to be fun, so I started doing that... and harvesting, and crafting, and doing stuff with my guild.
Also, you might want to look into getting into a guild. They will help you out, group up with you, etc.
Of course if you really are not enjoying it, then it isn't worth keeping up the subscription. That depends on you. But I wouldn't let the starting quest get you down.
