It's not surprising that there is confusion about how the skill system works. Originally I thought it was like the system in SWG, where you could choose whatever path(s) you wanted to take but were limited based on having a finite number of skill points to spend. Therefore it was impossible to be the best in everything. So when I first heard about the Ryzom system I thought that we were limited to 250 level ups in Crafting, period, which would force us to choose our skills wisely. This is not the case, however, and you can in fact level every single skill branch of every tree up to the maximum of 250. The only thing that is a barrier to doing this is time - it would take a very very long time to level up everything, which basically forces you to specialize at higher levels.
Even the manual is confusing on this issue. It states that as a crafter you could choose to be the best at crafting one or two items or be a jack-of-all trades and craft many types of items but not at the maximum quality (I'm paraphrasing from memory but it states something close to this). This isn't actually true since you COULD be the best at crafting everything if you had infinite time. But since most of us don't have infinite time to spend on the game we will ultimately need to choose what we want to take to high levels.
As an example I can currently craft all melee weapons (1h and 2h) as well as shields. In order to advance all these skills I need to work on 3 trees - 1h melee weapon crafting, 2h melee weapon crafting and shield crafting. I plan to take all of these up to level 100 where the next branch occurs. At that time I will be able to make all melee weapons and shields at Q100. But after that I will need to choose which particular weapon(s) I want to advance to higher levels. I just won't have the time to advance them all. I will need to focus on 1 or 2 if I ever plan on getting at least one to 250 skill.

I think at some point there will be a soft cap for jack-of-all-trades in the form of sp. Not sure about this but I just dont foresee you being able to buy every single possible upgrade,action,stanza,plan. More than likely this is the what the manual is alluding to.
