The trial version limits you to the starter island and a level cap in all skill trees. Not sure, but I believe the level cap is 21? Might be lower.

The full version has no level cap and you can access the full world of Atys.

There is no better race. Pick your race based on which you like the look of. There are no racial stats that would make one better or worse at anything.
